I love baking Anzac biscuits all year round. They make a particularly great postpartum snack and in recent years this has been my go-to recipe.
Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup caster sugar
- 3/4 cup desiccated coconut
- 125g butter
- 2 tbs golden syrup
- 1/2 tsp bicarb soda
- 2 tbs boiling water
Method
- Heat oven to 170 degrees Celcius.
- Combine oats, flour, sugar and coconut in a large bowl.
- In a saucepan combine butter an golden syrup and stir on low heat until butter is melted.
- Mix bicarb with the boiling water in a jug, then add to the butter and syrup mix – you should see the mixture start to fizz.
- Pour wet ingredients into the dry ingredients and stir to combine.
- Line 2-3 trays with baking paper and place spoonfuls of mixture onto each tray, leaving room for the biscuits to spread.
- Cook for 15-20 minutes (but keep a close eye on them from 15 minutes to avoid burning).
- Allow to cool on the tray slightly to help the biscuit firm.
